Today certainly had its ups and downs. First, my breakfast was amazing. An egg scrambled and cooked in a bowl in the microwave, then placed between two pieces of toast with some cheese. A breakfast sandwich really is easy and cheap, and I hope to include it in my diet after this week. I feel so wasteful for spending so much more money than I ever needed to on breakfast. In fact, after only spending a little over $8 dollars so far this week, it makes me feel wasteful thinking on all the meals that I have spent at least that much on.
Lunch was just left over dinner, so nothing special. Although I do want to take a moment to talk about how useful Tupperware has been this week. Storage containers are not cheap, but I couldn’t have made most of the meals this week if it wasn’t for being able to store leftovers. I’m sure it’s different if you have a whole family to feed, but most of the time when I cook just for myself there are leftovers. If you are on a budget (and hopefully even if you’re not) it is essential to save the leftovers in order to reduce waste. I wouldn’t have been able to make it through this week if it hadn’t been for my leftovers.
Finally, dinner was a little interesting. I went to open my can of corn and my can opener broke! So I dug up another can opener, and that one was broken too! So here I was alone in my kitchen, trying to open a can of corn. Any other day I would have just taken it as a sign and given up, but when you don’t have as many options you are willing to work a little harder. And, like storage containers, can openers aren’t free either. I suppose I could have asked a neighbor for a can opener, but my stubbornness won yet again.
